Healthy eating is hard work but worth every step, extra dollar, cleaned, peeled, and diced veggie.   The secret to staying on track is having some recipes that are delicious, easily memorized, and at the ready.  I'm sure you've heard people getting sick of eating chicken when it comes to dieting and weight loss.  And why chicken?  Chicken is a complete source of protein and is very lean making it a perfect choice.  I can't imagine getting tired of chicken when you have this list ready for action. Here is a list of literary every way I've ever cooked chicken.

Use pre-cooked chicken but shrimp, tofu, pork, beef, heck even egg would be good:) Any way you like it: crock pot, fried, baked, or my favorite: grilled.  I like to beat it flat with a rolling pin and marinate with Italian dressing.  If you bake it ahead of time you can have 4 completely different dishes.  

  1. Pesto- Just add pesto to a pan with chicken. That's it!  So simple and delish!  I love fresh veggies mixed in like tomato and zucchini, but the beauty of easy breezing cooking is it's great as is with 2 ingredients.
  2. Italian- add marinara and zucchini noodles and parmesan if you like.
  3. Mexican- add taco sauce to pan with peppers, tomato, and onions.
  4. Salad- Any and every.  Cobb is my all time favorite and sometimes just a simple mix of greens is perfect.  Sauté the chicken if you like.  If you want to keep it lean leave out dressing or use a yogurt based flavor.  Use cheese sparingly.
  5. Indian- Add coconut oil(or whatever you like), curry, turmeric. Add onion, green peppers, tomato, and coconut milk for a little extra if you like.  Serve over cauliflower rice.
  6. Chinese Soup Scallions,
